Cacao & Coconut Energy Balls

Cacao Energy Balls
These are almost always found at home in my fridge. I am a chocoholic and these hit the spot, delicious and I know they aren't filled with the bad stuff. They last for a decent amount of time in the fridge and are the perfect afternoon pick me up, or after dinner little treat.
Ingredients
✨Cacao Powder
✨Ground Almonds
✨Almond Butter
✨Medjool Dates
✨Coconut Oil
✨Descicated Coconut
Method
Start by getting 8-10 dates and taking out the the pips and putting them in a blender / nutribullet and blending up.
The next part, you can either add it all into your blender, or you can pop it in a large mixing bowl. Add in a large tablespoon of coconut oil (you don't want it super hard if you are hand mixing), 2 decent spoonfuls of almond butter and give it a good mix / blend.
Add in roughly 200 grams of ground almonds and 2 table spoons of cacao powder and mix thoroughly.
From there you should have a thick texture that you can roll into balls. If it is a bit runny, improvise and add some more ground almonds or cacao powder if you want them more chocolaty!
Final step is optional, but if you want a coconut shell, then pour some desiccated coconut into a small bowl, and roll the balls in the coconut and enjoy a little coconut crunch on the outside.
Leave them in the fridge and enjoy whenever you wish!
