Home Made Nutty Granola
This nutty granola recipe is super easy to make! I am a sucker for a big yogurt bowl with crunchy granola and plenty of fruit for breakfast and used to always buy shop bought granola and processed it was, until I saw how much refined sugar was in it...
Ingredients
✨Rolled Oats
✨Almonds
✨Walnuts
✨Pecans
✨Sliced Coconut
✨Salt
✨Cinnamon
✨Almond Butter
✨Coconut Oil
✨Maple Syrup
Method
Pre heat oven to 150°C. Grab a large baking tray and line it with parchment paper.
In a large mixing bowl pour in 2 cups of the rolled oats, roughly shop up the almonds, walnuts and pecans and add them to the bowl along with the sliced coconut, a good pint of salt and a teaspoon of cinnamon and mix it all together.
Next, using a small saucepan add 2 tablespoons of coconut oil, half a cup of maple syrup and 2 tablespoons of almond butter. Let that slowly heat up and mix it all together.
Once the above is complete, pour the warm mixture over the mixing bowl and thoroughly mix it all together. I like to get my hands in and really toss it around to make sure it is fully mixed.
Lay the mixture out on the parchment paper and push it down to about 1 inch thick and nice and compact.
Then pop it in the oven to bake for 15 minutes. After that, take it out and gently fork the granola so it forms in chunks and putting it back in the oven the other way around for a further 15 minutes. If it looks like it needs longer, put it back keep a close eye as it can be very quick to burn!
Before you eat it make sure it has cooled down for 20 minutes.
Enjoy on yogurt or sprinkle it over your porridge!
