Hearty Chicken & Sweetcorn Soup
It's freezing cold outside and I don't know about you, but my body is craving some nourishing warm food. This is the perfect winters dinner, with so many benefits. This chicken and sweetcorn soup can be a great option for a nutrient-dense meal that provides protein, fiber, and essential vitamins. Making it at home with wholesome ingredients ensures you get the healthiest version. So here is the recipe for you....
Ingredients

✨Garlic
✨Carrot

✨Chicken Stock
✨Salt & Pepper

Method
For the chicken it depends what part of the chicken you are using. I used a roast chicken I'd cooked earlier in the week. However you can use a chicken breast and boil it. Grab a sauce pan, add some water and bring it to the boil, from there, add in your chicken breast and boil for roughly 12/15 minutes (dependant on size). Once cooked, pop it to one side.
Slice up your 1 onion, 2 carrots and 2 celery sticks in a pan with some olive oil or coconut oil, add some salt and sauté them for 5-8 minutes. Meanwhile chop up the garlic 2-3 cloves and dice the parsley adding it into the pan.
Grab your chicken stock (if boiling the chicken, you can use that water) and add into the onions, carrots, celery, garlic and parsley and bring to a boil and then simmer for a further 15 minutes.
If you are looking for something a little bit more substantial, pour in bulgar wheat over the above and cook for 10 minutes regularly stirring. Adding more water in if it needs it.
Grab your chicken breast and shred it, put the chicken into the above pan, as well as the sweet corn and stir to warm it.
To finish, season well, sprinkle some parsley over the top and enjoy!
