Feel-Good Pho: A Healthy Hug in a Bowl

This feel-good healthy pho is a warm, nourishing bowl packed with delicious ingredients. It’s light yet satisfying, featuring immune-boosting ingredients like ginger, garlic, and fresh lime, all layered with vibrant vegetables. Method
Grab a sauce pan and bring some water to a boil, putting in your chicken breast to boil for 15-18 minutes, dependant on the size.
Then get a Wok or another large sauce pan, slice up your Garlic, Ginger and Chilli, and fry it up with some coconut oil, being careful not to burn it. Then add in a good splash of Soy Sauce, Fish Sauce and Sesame Oil, mixing in well and adding it more whatever it feels like it needs.
Next step is to add in the chicken stock, I keep stock in my freezer constantly! You can find my home made Chicken Stock recipe here!
Bring to a boil and simmer for around 15 minutes.
Grab your noodles and Sugar Snaps and add in for a further 5 minutes.
Take off your Chicken and with two forks, pull the chicken apart so it has a nice shredded texture to it.
Next up - we make the bowl! Grab a nice deep bowl and tongs and tong out the noodles, sugar snaps, then with a ladle pour over the stock and added the shredded chicken on top. I like to dress my phos with sliced up spring onions, coriander, sesame seeds, lime and chilli flakes.
And there we have it, a delicious home made pho, full of goodness and utterly delicious!
