No Bake Healthy Flapjacks
Another retreat favourite, super easy to make, delicious, and always found in my fridge! These home made flapjacks are a delicious and wholesome treat that can be both satisfying and nutritious! Packed with oats, seeds, and natural ingredients, they provide a great source of fibre and energy, making them perfect for a quick afternoon snack. They are so easy to make, you bearly need a measure, you don't need to bake and you can't really get them wrong!
Ingredients
✨Oats
✨Mixed Seeds / Nuts (of your choice)
✨Dates
✨Coconut Oil
✨Peanut Butter
✨Dark Chocolate (the darker the better!)
✨Sea Salt
Method
You really don't need to focus on getting the right amount for these so trust your intuition!
Grab your Nutribullet or blender and pop in a good amount of oats, maybe 2 large cups and roughly blend them. Pour them into a large mixing bowl. Then grab your dates, and chuck roughly 8-10 of them into a blender so they are diced up and add them to the bowl with the oats.
For the seeds / nuts, it is totally up to you. I like to pour in my seeds and for the nuts, depending on how big they are, roughly chop them up. Pour them into the bowl and roughly mix it all together.
Then grab a saucepan and put in 2 table spoons of coconut oil and 2 table spoons of a nut butter of your choice. Melt it all and pour it over the above into your large bowl. I like to start using a spoon and then get my hands in to mix it all together.
Then grab a baking tray, or similar, lay it with parchment paper and pour in the mix evenly. Then push it down with your hands, and smooth it out so it is super compressed and tight. I like to chuck them in the fridge to cool for the next part!
Next up, melt your dark chocolate. Grab a saucepan with some water and bring it to a boil. Then add a small saucepan on the top and melt your dark chocolate.
Once melted, grab the baking tray from the fridge and pour over the dark chocolate evenly and sprinkle some sea salt on the top. Pop them in the fridge too cool.
Once cool, cut them up into squares and you can thank me later - these are DELICIOUS!
